20-21 June 2024 Cheese Class. Thank you to all the attendees of our cheese course in Stellenbosch this past week. We had 3 Mom’s with their respective children attend in this fun group. Thank you for joining us and making our work such fun!
Just realised that I have been involved with presenting cheese-making courses from 1998 and that the dynamic duo of Elaine and myself(Leon the Milkman) have been presenting together monthly from 2013. This our 11th year, wow! We have been asked many times to present an advanced course, but I think most of that comes from applying the principles we teach to all the different cheeses that you make – as they are universal with of course small adaptations if you are making a softer or harder cheese.

We are taking a break from courses in April with all the holidays, National Champs Cheese Judging and late cancellation of the Cheese Festival(which now has a new date in September
In May we will have a Hartbeespoortdam, Bryanston and Stellenbosch course again. 10-11 May in Bryanston, 13-14 May in Harties, 25-25 May in Stellenbosch.

Cheese courses 2023 – Thank you to all our 14-15 Feb Harties NW participants and our 17-18 Feb Bryanston GP courses! We had a great time with you all!
To a lot of cheese making!
We cover all cheese-making theory, and the practicals include cheeses that cover the basis of vast groups of other cheeses with the principles we cover.
These base cheeses are gouda, cheddar, feta, mozzarella, halloumi, and ricotta. We also discuss and make yogurt and amasi/kefir to explain the role and influence of different bacterial strains in cheese making.
